With the item "Shukto" the Bengalee people are very much accustomed. They use this item as the starter of their lunch menu. Without bitter gourd "Shukto" can't be made that the Bengalee people know very well. But this "Shukto with Head of Fish (Maacher Mathar Shukto)" will be made without bitter gourd. It is the specialty of this recipe which I want to share with you. 


Ingredients:
  • Pieces of head of fish(Rohu/ Catla): 1pcs broken into small pieces
  • Brinjal (Eggplants): 2pcs
  • Potato: 4-5pcs
  • Ridge gourd: 3pcs
  • Pumpkin: 4/5pcs
  • Bay leaves: 2pcs
  • Wild Celery (Radhuni): 1/2tsp
  • Salt & Sugar: According to taste
  • Turmeric powder: As required
  • Mustard seed: 1tps
  • Mustard pase: 1/2tps
  • Mustard Oil: 50gm

Preparation:
Clean the fish head and marinate it with salt & turmeric powder and make it fry lightly.
Slice all vegetables.
Pour oil in the pan and make it hot.
Add bay leaves , mustard seeds and wild celery (radhuni).
Then add ginger paste & stir it well.
Now put all vegetables and stir it well for 3minutes in light flame.
Add 1tps of turmeric powder, salt & sugar as required & cook it for 2minutes in simflame.  
Then add a cup of water and cover it for 4-5minutes and let it be boiled.
Uncover the lid and add the fish head with the tendered vegetables.
Now add 1/2tps of mustard paste, wild celery paste and slight ginger paste and mix them well.
Finally wait 2/3minutes till the gravy is prepared. 
My Shukto is ready to be served with rice.

  9. may i know what's the international name of the fish? i love to eat sea food especially those with soup like this one. :) it's already past 12 midnight here in our place and this made me visit our kitchen. i'm salivating actually. :)
